Bitter-Sweet Spinach

                  Spinach is one of those difficult veggies to get your children to eat. Here is a salad that I served my son frequently, that encouraged him to eat more vegetables.

                   Try it with your children. I’m sure that you will be surprised.

                                                  Bitter-Sweet Spinach

Ingredients:

1 bag fresh spinached, washed, dried well, torn into pieces

1/2 cup purple onions, thinly sliced

1 small can diced or sliced peaches, drained

4 slices of turkey bacon, cut into small pieces

1/3 cup raspberry vinegar

3 tsp. sugar

1/4 tsp. salt

1/8 tsp. pepper

Directions:

Cook bacon in skillet, until crisp, add vinegar, sugar, salt, and pepper, stirring until sugar is dissolved and a fragrant aroma. Add spinach and onions, stiring, remove quickly from heat, add peaches, mix well.
