                  Eating healthy is everyones goal today. Frankie is determined that Ashlee, Hailey and himself eat a variety of healthy foods that  ‘Tastes Good’! Being a big lover of vegetables, Frankie uses an assortment of veggies in all of his meals. Here is a lunch favorite of his and the girls.

                   You mix everything the night before. Very easy.

                   I invite you to get together with your chidren and make this lunch idea together. Remember healthy eating creates heathy bodies, creating healthy minds.

                                          Pocket Bingo Sandwich

Ingredients:

1 cup broccoli florets, chopped

1 large firm tomato, seeded and chopped

1/2 cup yellow squash

1/2 cup zucchini, chopped

1/2 cup purple onion, chopped

1/2 cup ripe olives     * chopped black olives can be substituted *

1/2 tsp. parsley flakes

1 tbs. low-fat Italian Dressing

1 tbs. lemon juice     *substitute: orange juice, cider vinegar, or rice vinegar *

1/3 cup Hummus    * recipe follows *

In medium salad bowl toss all of the above ingredients, except Hummus, together, toss well, refrigerate overnight.

Hummus:

1 15oz. can Navy beans, rinsed, drained

1/8 cup fat-free Italian dressing

1/8 cup lemon juice     * see above for substitutes * * see note below *

1 tbs. dijon mustard

In food processor, combine beans and next three ingredients, until smooth. Transfer to air-tight container, refrigerate over night.

Directions:

Spread inside of pita halves with Hummus.

Fill pockets with vegetable salad mixture.

Wrap tightly in plastic wrap.

Add ice pack  to lunch box.  Seasonal fruits and beverage.

Note:  Adding lemon juice, orange juice, cider vinegar or rice vinegar to bottled low-fat dressings will  cut the amount of fats in the dressing, thus saving calories.
