I’m just learning about Celiac Disease, but I do know that healthy cooking for our children is a priority, whether it’s Gluten free, sugar free, or fat free. The health of our children depends on the strength of this world. I feel a healthy body, produces a healthy mind.
My son Frankie, with Ashlee, 8 yrs. old, and Hailey 6 yrs. old, made a batch of these cookies together and loved them. I know that your family will enjoy them also.
I’m posting this recipe exactly the way Sue Seward sent it to me:
Ingredients:
1 cup peanut butter ( we use Teddie Smooth old Fashioned Peanut Butter
1 cup Brown Sugar
1 egg
1 heaping tbs. of baking soda
1/2 cup chocolate chips
Directions:
Preheat oven at 350 degrees F.
Line cookie sheets with parchment paper.
Combine all ingredients well, ( by hand or mixer )
Roll dough into small balls, place on cookie sheets.
Lightly press to flatten slightly.
Bake for 8-10 minutes, depending on how big you made them.
Let cool and enjoy!
