Southern Italian Style Catfish

My son Frankie loves fish & he is trying to teach his daughters, Ashlee 9 yrs.old. & Hailey, 6 yrs.old to enjoy a variety of fresh fish dinners.  Below is a delicious Catfish dish that he & the girls prepared together. Ashlee prepared the fish, while Hailey fixed the salad. Hailey uses a plastic knife to cut the tomatoes, for safety. Frankie removed the hot pan from the oven. Together the girls cleaned up the prep dishes & set the table.

It’s a fast meal to prepare, less than 30 minutes from start to finish. Really easy for children to help with.

Prepare this meal with your children. Create memories that will last a lifetime.

Ingredients:

1 cup of Italian Flavored bread crumbs

Salt & pepper to taste

4 Catfish fillets – Perferably farm raised,  frozen will work also

2 egg whites, lightly beaten

Directions:

Preheat oven at 450 degrees.

Line a shallow baking pan with aluminum foil.

Lightly spray foil with olive oil cooking spray.

Combine Italian Flavored bread crumbs with salt & pepper in a shallow dish, stirring well to blend.

Dip fish into beaten egg whites, dredge in bread crumbs, place in baking pan.

Bake for 8 to 10 minutes, fish should flake easily with fork.

Remove from oven, transfer to dinner platters.

Serve with relish or condiment of choice.

Salad

Ingredients:

1 package of  Coleslaw mix

1 can Black olives, sliced, drained

1 pint Cherry Tomatoes, rinsed, cut in halved or quarted

Zesty Italian salad dressing, Fat-Free

Directions:

In a bowl with a lid, add Coleslaw, Olives, Tomatoes. Pour about 1/2 cup of dressing over salad mixture. Place lid on bowl and shake well to mix all ingredients evenly. Transfer to salad plates.

Serve fresh Watermelon slices for dessert.

I’m sure your family will enjoy this recipe. We love the rich flavor, plus that it’s so easy to prepare. My grand daughters have so much fun preparing it with their daddy.
