Caesar Salad Panini with Cream of Broccolli Soup

          With temperatures reaching over 100 degrees almost daily this time of year in Tucson, Az., Frankie and the girls prefer to have easy, simple but always healthy meals.

           Soup and Sandwich  to the Rescue!

           Try this  Soup and Sandwich dinner. On the table in less than 30 minutes.

           Frankie slices the bread & adds dressing to salad.  Big sister Ashlee slices the onion, chops the tomatoes & slices the eggs*. Hailey tears the lettuce, rinses and drains the beans and olives. The soup is warmed in the miro-wave, then poured into mugs.

Ingredients:

1 long oaf of  Italian or French Bread

1 small head Romanian Lettuce, rinsed, towel dried, torn into pieces

1, 15 oz. can Dark Red Kidney Beans, rinsed, drained

2 large Tomatoes, washed, dried, chopped

1 small Purple Onion, sliced thin

1 cup Feta Cheese, crumbled

1, 8-10 noz. can Black Olives, sliced

2-3 Hard-Boiled Eggs, sliced  * optional *

1/2 cup Caesar Salad Dressing, Fat-free

2 tbs. Lemon juice

Directions:

Cut 1/2 inch slice from top of bread; set top aside; hollow out bread, leaving a 1 inch shell.

In bowl with tight fitting lid combine lettuce, beans, tomatoes, onion, cheese, olives, and eggs.

Pour Caesar Dressing and Lemon Juice over salad; cover with lid; shake well to blend.

Heat Cream of Broccolli soup in microwave for about 90 seconds or until hot.

Meanwhile, fill bread with Salad mixture; place top of bread back onto loaf; slice diagonally into 6-8 sandwiches.

Transfer sandwiches to plates; pour soup into mugs; serve and enjoy.

Dessert: Watermelon Slices

Note: When draining & rinsing more than one can of vegetables, as for a salad, pour all the cans into one strainer; rinse, drain together. Save time, work and clean-up.

Tip of the Day: Never let yourself get too hungry. Have 4-6 small meals daily. Choose foods that are high fiber, with ‘rich’ nutrients and lean protien.  Omit or limit your consumption of soda, coffee or alcoholic beverages. Try to drink atleast 36 oz. of water per day, 4-6 oz.  of water before every meal! Doing this will partially fill your stomach  and  speed the cleansing of your digestive system.
