Grouper with Feta-Spinach Salsa

        Fish is a fast and nutritious meal to prepare, especially in the summer months. Grouper is usually reasonably priced and has become one of the staples in Frankies refrigerator.

        Frankie prepares the Grouper and gets it into the oven, also gets the Orzo cooking. Ashlee chops the tomatoes, while Hailey prepares the spinach. Both girls set the table, as Frankie is transferring the meal to their platters.

        Dinner is served in less than 30 minutes!!

Ingredients:

4 Grouper fillets  * one per person*

1 1/2 tsp. Greek seasoning  * Italian seasoning may substitute *

1 pkg. Fresh Baby Spinach leaves, washed, dried   * frozen can substitute, thaw and squeezed dry well *

2 Plum Tomatoes,  washed, dried, chopped

1/3-1/2 cup of Feta Cheese,  crumbled  * Tomato-Basil flavored is wonderful with this dish *

1, 8 oz. pkg. Orzo, prepared according to package directions

Olive oil cooking spray

Directions:

Preheat oven at 400 degrees.

Get Orzo started cooking.

Gently coat  shallow baking pan with cooking spray, set aside.

In bowl, mix spinach, chopped tomatoes and Fetta cheese, stirring to blend well, set aside.

Sprinkle both sides of  Grouper fillets with seasoning; place on baking dish, gently spray tops of fillets with cooking spray; place in oven, cook for 3 minutes.

Turn fish over; carefully spoon spinach mixture over tops of fillets; cover with foil; cook for an additional 4 minutes. Fish should flake easily with fork.

Place one fillet on each platter; spoon cooked Orzo next to fillet. Serve.

Dessert:  Orange flavored Sherbit

Does your dishwasher smell?  Pour a cup of distilled vinegar in a empty machine; run through a full cycle. Removes soap scum, & deoderizes. Never spend money on those supermarket products again!!
