Vegetable Medley Bake

         Try this colorful, nutritious vegetable dish- 5 minute prep time- 20 minute bake- dinner on the table in less than 30 minutes.  Serve with warm bread sticks or French rolls.

 

Ingredients:

2, 10 oz. pkgs. Frozen Italian mixed vegetables , thawed   * any assorted vegetables work *

1, 15 oz. can Chili flavored tomatoes, undrained

1, 10 oz. can Black Olives, drained, rinsed

1, 15 oz. can Kidney  Beans,  rinsed,drained    * Gabanzo beans work also*

1/4 tsp. Crushed Red Pepper,  or to taste  * optional *

1/3 cup Pepper-Jack cheese,  shredded

1 pkg of refrigerated Bread Sticks,  or bread of choice

Directions:

Preheat oven at 350 degrees.

Combine all ingredients, ( except cheese and bread ) into a 2 quart baking dish; stir well.

Cover with foil or glass lid; bake for 15 minutes.

Line shallow baking tray with foil; place breadsticks on tray. Place breadsticks in oven with vegetables; bake according to package directions.

Uncover; sprinkle cheese evenly over top; return uncovered; bake another 5-8 minutes.

Spoon into bowls. Serve with warm bread.

Dessert:  Sliced peaches over a scoop of frozen yogurt.
