This dinner is not only quick to prepare, but pretty to look at, with the assorted colors and flavors. From start to table, less than 30 minutes.
Frankie startes the pasta cooking and places the Garlic Bread in the oven. Ashlee cooks the chicken pieces with picata sauce. Hailey sets the table and helps with the clean-up afterwards.
Ingredients:
1 pkg. Rainbow pasta * Whole wheat or Gluten-Free pasta can be substituted *
1, 24 oz. jar Picata Sauce, mild
1, 8 oz. pkg. Fresh Chicken nuggets * Chicken strips for Stir-fry can be substituted *
1/3 cup Monterey Jack cheese, shredded
1 loaf Fresh Garlic Bread, prepared according to directions
Directions:
Cook pasta according to directions omitting salt and fat.
In nonstick skillet, medium heat saute Chicken until lightly brown, no longer pink.
Add Picata Sauce, stir to mix; cover; cook another 5 minutes, until sauce is heated through.
Transfer cooked, drained pasta to dinner plates. Top with chicken mixture and cheese.
Serve with warm garlic bread.
Dessert: Combine 1/4 tsp Ground Cinnamon in 1/3 cup Vanilla low-fat yogurt; scoop into dessert dishes.
Slice 1 banana and 1 cup sliced strawberries; add evenly to spiced yogurt. Serve.
