This recipe is NOT for children. I love preparing meals in my slow cooker, since it simplifies all of the work for me, because having Parkinsons & Fibromyalgia, cooking can & does become a challange at times. I hope that you will enjoy this recipe. I learned of it while I lived in Italy, many, many years ago. From my kitchen to yours, enjoy!
Ingredients:
1 lb. beef stew meat, cut into bite-sized pieces, fat trimmed
2 medium sized zucchini, cut into bite-sized pieces
1/4 tsp, each Oregano and Parsley flakes
2, 15 oz. cans Italian style diced tomatoes, do not drain
1/4 tsp. ground cinnamon
Directions:
On bottom of a 3 1/2 quart electric slow cooker place zucchini pieces.
Add beef, and the rest of the ingredients.
Cover; cook on high for 1 hour; reduce setting to low; cook for 7 hours.
Serve with slices of sun-dried tomato bread or hot baked biscuits.
Dessert: One scoop of Lemon flavored Italian Ices. * Or flavor of chioce *
