Broiled Flounder with Warm Fruit Salsa

         My son and grand daughters love fresh fish. Fortunately, Tucson & most parts of Arizona have wonderful fish markets.  This flounder dish takes about 15-20 minutes to prepare and just bursts with flavor.

Ingredients:

4 flounder fillets

2 tsp. lemon-herb seasoning  * salt-free *

1/4 tsp. salt  * Kosher or Sea Salt *

1, 8 oz. can crushed pineapple, in juice, drained, reserve half of juice

3 scallions, thinly sliced

1 small red or green apple, peeled, diced

1/2 tsp. crushed red pepper  ( optional or to taste )

Olive oil Spray

4, small Sweet Potatoes, cooked in your microwave.

Directions:

Wash, dry sweet potatoes; poke with fork on all sides; wrap in paper towels; bake on high in microwave for 10-12 minutes: until soft.

Lightly spray both sides of fillets; sprinkle lemon-herb seasoning and salt on each side.

Place fillets on lightly sprayed broiler pan.

Broil about 5 inches from heat for 7-8 minutes, fish should flake easily.

Meanwhile, combine, pineapple, reserved juice, onions, apple, and crushed pepper in small microwave proof bowl.

Place covered bowl in microwave the last 2 minutes of potatoes; continue to cook together.

Remove potatoes and bowl of salsa.

Place one potato on each plate; add a fillet to plate; top fillet with warm salsa. Serve immediately.

Dessert: Warm Apple Pie slice, topped with a scoop of Vanilla Frozen Yogurt
