On hot summer days, quick, easy dinners are a must for Frankie. Tacos are so simple and the girls love to help preparing them. Ashlee, 9 yrs. old, chops the onion, and pepper. Hailey, 6 yrs. old, washes & dries the lettuce, drains and rinses the beans and olives, while Frankie sautes the soy-burger meat. Everything is placed on indiviual plates on a huge lazy susan in the center of the table, so everyone can fix their own tacos. Dinner is served in less than 30 minutes!
Ingredients:
4 soy burgers, thawed, crumbled
1, 8 oz. can tomato sauce * salt-free *
1 tsp. minced garlic
2 tsp. chili powder
1 tsp. ground cumin
8 taco shells
Toppings:
1 small onion, chopped
1 green pepper, chopped
1/2 head crisp leaf lettuce , washed, dried, shredded
5 oz, shredded carrots
1, 15 oz. can black beans, drained, rinsed
8 oz. jar salsa
1, 8 oz. pkg. mexican style shredded cheese * reduced fat *
1 can olives, sliced, drained, rinsed * any olives of choice ** We use Black and Green with Pimento *
Directions:
In skillet, lightly sprayed with vegetable oil; on medium heat, saute crumbled soy burgers until just brown and heated through, about 5 minutes.
Add tomato sauce and seasonings; lower heat; stirring well, continue cooking until hot, about 5 minutes more.
Place toppings in individual serving dishes.
Spoon soy-burger mixture into each taco. Top with choice of toppings. Enjoy!
Dessert: Chocolate Brownie topped with sliced fresh Strawberries.
