Chili Pot Pie

         A All-in-One-Pan meal, prep time 9-10 minutes; cook time 17-18 minutes!!!!!!!!

          Absolutely Delicious!!!

Ingredients:

1, 15 oz. can chili beef  soup

1, 11 oz. can Mexican style corn, drained, rinsed

6 oz. Mexican style cheese, shredded

1 onion, finely chopped

1-2 tsp. hot chili sauce  * to taste; optional *

Vegetable cooking spray

1, 6 oz. pkg. Cornbread Mix  * Buttermilk *

2/3 cup water

Directions:

Preheat oven at 450 degrees F.

Coat skillet with cooking spray; over medium heat until hot.

Add onion; saute until tender, about 3-4 minutes.

Add soup, corn, and chili sauce to onion; stir well to blend; heat about 4-5 minutes

Lightly spray baking dish with oil; transfer mixture from skillet to baking dish.

Top with cheese, covering evenly.

In bowl, blend cornbread with water until smooth; pour batter evenly over mixture in baking dish.

Bake for 15-18 minutes, until golden brown.

Serve with Spinach Salad.

Dessert: Melon Balls or Watermelon Slices.
